Australians lets us all rejoice, for we are
young and free
With golden soil and wells for toys, our
home is dirt by sea.
I am actually quite ashamed to admit this,
but I think I was 20 something before I finally figured out I had the words to
our national anthem SO wrong.
Mind you, THIS coming from the girl who was far
too easily convinced by her friends that they were building a harbour tunnel
because The Harbour Bridge was past its use by date and was being pulled down.
I was gutted about the idea of losing our
beloved bridge. I am a patriotic gal through and through – all be it one who
thought we were dirt by seas.
My pride in this country of ours has only
deepened with age (kind of like the lines on my face too it seems) and I love
nothing more than a little ‘Oi Oi Oi’ action come Australia Day.
Alright, so we all know I am a sucker for
any excuse to entertain… but come on… Is there any better reason to celebrate
than this gorgeous country of ours?
I think not.
And so when it came that time of the month
for me to road test some of the recipes from the January Coles magazine, I
picked the BBQ Bliss recipes our gorgeous home grown Aussie boy Curtis Stone
put together… because BBQ = Easy and because Curtis = HELLO do we really need
an excuse?
It’s CURTIS!!!!! I would eat pretty much anything Curtis told me
too.
On a side note my friends at Coles, I have
been an everyday mum’s voice of Coles for a few months now – don’t you think
it’s time you hooked up a bit of a meet and drool greet session with
Curtis?
*Ahem* Just saying!

Right, so where were we?
Ummm Curtis drooling… I mean road testing
Curtis’s recipes for Australia Day.
We chose three recipes to try out this
month because being the holidays I have extra boys to feed and after surfing,
swimming and skating all day – man they can tuck away the food.
First up was the BBQ Chicken on Flat Bread
with Cucumber Pico De Gallo. Two out of 4 kids and both adults gave this one
the two thumbs up. The other two thought it was a little spicy so leave the Jalapenos
out of the salsa if you are catering mainly for the kids.

And saving the best for last – the Saganaki-Style
Barbeque Prawns. Oh come to mama.
These were the bomb I tell you, the
absolute bomb and the fight was on for the last spoonful.

So for Australia Day this year, we will be
feasting on Saganaki prawns and one mighty big pav piled high with peaches, nectarines, passion fruit, kiwi fruit and
mango.
I’m thinking I
might give this one a go.
Damn it, I may just
have to road test one of those before Australia Day… you know, so I’m sure to
nail the recipe on the day and all that.
I’m pretty sure
there won’t be any complaints.

Decorations, including;
serviettes, cups, stubby holders, flags and bunting. Yep, they have everything you need to make this the
biggest fair dinkum Australia Day celebration yet.
