Spring Is a Wuss - Let's Eat Carbs!

OK Spring decided to show up for all of five minutes before hightailing it back behind the clouds and cold wind.

Wuss. And here I was on the first day of spring practically cartwheeling I was so stoked with the sunshine and warm weather. By practically cartwheeling I really mean I kind of waved my arms in the air and went "Yay".

I can't cartwheel.

Not even to save my life.

I do however intend on making the most of what is hopefully the final hurrah from the cold weather by fitting in at least one or two more servings of some stodgy carbs before I go all light and breezy with the salads and BBQing.

This one pot wonder is just what the weatherologist thingy person ordered.

What is the correct term for the person who reads the weather? My mind has literally gone blank.

Whatever.

BBQ CHICKEN, ROSEMARY & CHEESY MAC
This is the ultimate winter comfort food. Think cold nights rugged up in front of the fire and a steaming hot bowlful of yuminess.

Ingredients:
500g Rigatoni
200g grated tasty cheese
100g grated mozzarella cheese
1 clove of garlic crashed
2 tablespoons chopped fresh rosemary
1 litre thick cream
2 cups shredded BBQ chicken
Pepper

Put your water on to boil.
When boiling add your pasta and cook until it is al dente.

In a large saucepan combine your cream, rosemary and garlic and bring to the boil.
Reduce to a simmer and continue stirring until the cream has reduced by a third and thickens.
Add your grated cheeses ad stir to combine, then add your chicken.

Drain your pasta well and add to the chicken and cream mixture.
Stir through so the pasta is coated.

Serve hot and garnish with pepper and a sprig of rosemary.
